Chop the tomato, cucumber, and onion into a small dice. You can peel the cucumber before chopping if you’d like.
To a small bowl add the feta, tomato, cucumber, and onion.
Mix together the olive oil, lemon juice, and spices and stir to combine.
Pour the dressing blend over the other ingredients, and toss to combine.
Spoon the mixture evenly between the Phyllo Shells.

To keep phyllo cups crisp, it's best to fill them just before serving. If you need to make them ahead of time, store the filled cups in an airtight container (once they’ve cooled) to maintain their crunchiness.Modify the ingredients in the filling to suit your preferences. Or add other ingredients like olives or bell peppers.
