A super refreshing wine cocktail made with St Germain, champagne and fresh mint, a classic Hugo Spritz is the easy drinking spritzer perfect for your next girls' afternoon.
In a spritz glass muddle the fresh mint leaves and St Germain. Let sit for 3 minutes.
Add ice and top with prosecco and soda water.
Stir gently.
Garnish with fresh mint leaves.

Variations
Cucumber - add slices or ribbons of cucumber made with a vegetable peeler (these are super pretty!) to the spritz glass to infuse a bit of cucumber flavor. This version is super refreshing. I've not tried it, but I think cucumber flavored soda water would also work well here (but don't be tempted to substitute for tonic water which will make the spritz bitter. Not what we're going for!)
Citrus - slices of lime added to the glass will add a little freshness and zip! Lemon would also work but I think lime tastes better.
Top tips
Want a sweeter cocktail? Just add a dash of simple syrup.
Looking for a lower alcohol drink? Just reduce the amount of sparkling wine and add a little more soda water instead.
To make Hugo Spritz for a crowd, just scale up the recipe in a pitcher. Just be careful when adding the Prosecco and the soda water, and stirring the drink.
If you just a single spritz for yourself, you can use individual-sized Prosecco so you don't waste a whole bottle.
