Easy Beer Cheese Dip
In under 30 minutes, you can enjoy this easy Beer Cheese Dip and celebrate St. Patrick's Day deliciously. Serve this festive appetizer with pretzels, chips, veggies and more.

lager beer

cheddar cheese

Instructions
Add the butter and flour to a saucepan on the stove.
Stir with a whisk as the butter melts, forming a roux.
Add garlic powder, parsley, salt and pepper and continue to whisk while the roux cooks for 2-3 minutes.
Whisk beer in to the roux as it thickens. It will be thick gravy consistency.
If it's too thick, add 1/8 cup more beer, then stir again, taking care to not make it too thin. (It will continue to thicken as it cools a little).
Add the grated cheese to the saucepan and whisk until melted and smooth.
Transfer to a serving dish, fondue pot or mini crock pot.
Add fresh cracked black pepper and serve with pretzels, bread, veggies and chips.
Notes
The beer flavor gets stronger as it cooks so make sure you choose one that you love the flavor of.
Pre-shredded cheese doesn't typically melt as well. Block cheese, like this tasty Truly sharp cheddar, that you grate yourself is a better choice.
This dip isn't for everyone. It's a very bold flavor so you will want to warn your guests.
Keep this dip warm while serving by serving it in a fondue pot or a mini dip warmer. If a skin forms on top, just use a spoon to mix it.
Store this in an air-tight container, in the refrigerator, for up to 3 days.
