Variations
Use flavored syrup - simple syrup is essential to balancing this virgin espresso martini, and you can use it to add extra flavorings. Both my vanilla simple syrup and my vanilla cinnamon simple syrup would be delicious here!
Up the coffee flavor - if you want an extra hit of coffee sprinkle a little espresso powder over the top of the cocktail for an even fancier finish. Cocoa powder also gives a lovely finish!
Make it creamy - add a dash of heavy cream to the cocktail shaker for a creamy finish.
There will be some foam on the top of the glass from shaking. If you don't like the look, use the back of a spoon and a piece of paper towel to skim it off. I did that for photos, but I wouldn't care about the foam when drinking. The Seedlip is flavorful but watery (and zero calories). If you prefer to sip something with a little more body I would consider adding cream to give it more heft.
