Why I love this recipe
This Pineapple Mule cocktail is a delicious drink to try when the weather warms up.
The yummy mix of lime and pineapple juice combined with your favorite vodka, ginger beer, and bitters creates a drink idea that is perfect for sipping by a pool.
A simple garnish of mint gives your nose a quick high-five as you bring the mug to your mouth.
Trust me, that’s something that you want. A nose high-five from fresh herbs is never a bad idea.
This is a fruity, tropical beverage that is a must-try.
Ingredients
- vodka (whichever brand works for you)
- pineapple juice (I use canned because it keeps for ages but you can use fresh, Trader Joe’s make a great one)
- fresh lime juice
- ginger beer (I like Reeds)
- bitters
- mint (for garnish)
I love this recipe because aside from the fresh lime juice, most of these ingredients can be found in your pantry.
I always have these tiny pineapple cans around. I’m terrible about making sure that I have the ingredients on hand before I start a recipe!

Tips
- If you don’t love vodka, swap it out with another liquor you like better! Tequila would be a tasty option.
- Add other fruit flavors by muddling fresh fruit in the bottom of the Mule mug before adding the rest of the ingredients.
- Make it even more tropical by adding a little coconut cream!
And that is it! This tropical cocktail recipe really is that simple! Make a Pineapple Moscow Mule this weekend.
Frequently Asked Questions
While ginger beer was originally alcoholic, as it was made from fermenting ginger, sugar and water, most of today’s ginger beer doesn’t have alcohol in it. You’ll find most commercialized versions of ginger beer are used as a way to add crisp flavor to a drink rather than an extra hit of alcohol.
Bitters are alcoholic spirits that are infused with roots, herbs, fruits, and leaves. Bitters are a way to help balance flavors. And it works really well in Pineapple Moscow Mules to tone down the sweetness from the fruit juice. And you should also try Bitters and Soda. Super refreshing. Hardly any alcohol.
