I don’t consider myself a skilled baker. But I do consider myself an expert dessert eater. Dump cakes really can’t be screwed up, which I am super grateful for.
This dump cake recipe is super simple. The yellow cake mix, crushed pineapple, sweetened condensed milk and coconut flavors play really well together.

Even though the flavors of this cake are coconut and pineapple, it doesn’t come off like a pina colada. The flavors are actually pretty subtle and taste generally sweet and fruity.
Canned crushed pineapple doesn’t have an overwhelming pineapple flavor. And the way the juices mix with the dry cake mix to create that flavorful crust on top…out of this world!

Ingredients
- Crushed Pineapple
- Boxed Yellow Cake Mix
- Melt butter
- Sweetened condensed milk
- Coconut
The special can opener tool helps a lot. Make sure to make the holes big enough so that the condensed milk easily comes out. Or just remove the lid entirely and use a spatula to scrape it all out.
I love using canned pineapple in dump cakes because of the amount of juice. Between that sweetened fruit juice and the butter, the cake mix is able to absorb it and end up tasting amazing!
While I like to use yellow cake mix for this dessert, you can use white if you prefer.
The coconut adds texture and slight flavor to the top. You can leave it off if you don’t like coconut or don’t have it. It won’t make or break this dessert.
How to Make Pineapple Dump Cake with Condensed Milk and Coconut
Step 1
To a 9 x 13 pan, add both cans of crushed pineapple with the juice.
Step 2
Sprinkle the dry cake mix over the top of the pineapple.
Step 3
Drizzle sweetened condensed milk over the dry cake mix. It’s ok if it doesn’t cover it completely. You can leave it or use a spatula to dunk any dry spots into the condensed milk.
Step 4
Pour the melted butter as evenly as possible across the top.
Step 5
Sprinkle the coconut on the top.
Step 6
Bake at 350 degrees for 45-50 minutes until golden brown.
The coconut makes the crust a little bit chewy without giving it a super strong coconut flavor.
I like to serve this Pineapple Dump Cake once it’s cooled a bit. You can serve it plain, top it with whipped cream or even a scoop of vanilla ice cream.
Tips
- You may think that you can skip the butter when you are using the condensed milk. But don’t skip it! The butter and yellow cake is too good together. That is where all the goodness from a dump cake comes from. Otherwise, it’s just fruit.

Why Use Condensed Milk
The condensed milk creates more of a crust on the top than a traditional dump cake recipe. The flavor doesn’t change too much because of it.
Condensed milk is weird. I don’t like the flavor of it straight out of the can, but when you add it to baked goods… crazy delicious.
Condensed milk adds a layer of flavor – kind of nutty, roasted, caramel-y – it is really hard to describe. It also is a great way to add creaminess plus it also adds a low-key sweetness.
While I normally love the cake and butter topping from a regular dump cake recipe, the condensed milk adds a crispiness to the top that you don’t get otherwise.
It’s a little bit of a different texture than normal, but I really like what the finished product tasted like.
Am I going to change all my dump cake recipes to include condensed milk? No. But will I play around with it some more? You betcha.

Easy Pineapple Dump Cake with Condensed Milk
Ingredients
- 40 oz. cans crushed Pineapple (2 – 20 ounce cans)
- 15.75 oz. Boxed Yellow Cake Mix (1 boxed cake mix even if slightly different ounces)

Delicious! I added just the cream part of 1 Can Trader Joe’s coconut cream (it’s very coconut forward) to the pineapple. Sub 1 Can crushed pineapple with pineapple tidbits to have more chunky pineapple, but did drain almost all the juice of the tidbits since I added coconut cream. Absolutely wonderful & easy.
In regard to placing the butter on top of the cake mix…I tried grating a frozen stick of butter on a box grater, the large side. Worked great! I lose patience slicing the butter and placing it all in rows. Grate the butter and sprinkle it on the cake mix. Worked good for me!
I omitted the coconut, but otherwise followed the recipe as written. The cake mix was still powdery throughout. I ended up stirring it up, which made an ugly but tasty cake.

I made this today and it was delicious. I didn’t have any evaporated milk in the pantry so I used Goya Crema de Coco which made the perfect replacement and add a ton of additional flavor. I was best served chilled but I could make this once a week..Absolutely yummy! Thank you for the recipe.

I tried your Pineapple Dump Cake yesterday following directions listed. What a disappointment and waste of money. The cake mix was still dry when I cut into the cake. Dry mix was throughout the “cake.”
I’m so sorry that was your experience! In a dump cake the cake mix acts more like a crust. Since there are no leaveners in this recipe, the cake mix is used as flavor and will not rise. It can be hard to get the butter and condensed milk to cover the entire top, especially since you aren’t supposed to stir. If you were to try this again, I suggest using a spatula to try to spread the condensed milk and melted butter out as much as possible. Almost all of my dump cakes usually end up with some powder left from the cake mix after cooking, but I’ve never noticed it changing the flavor at all. Again, so sorry you were disappointed!
exactly spot on. Love the dump variety of cakes. It’s so easy to do with grandkids! We have 12 so something they can do most of the work on brings them joy, satisfaction & pride.Also gets extra fruit into their diets.lol The older grands do more complicated things with me then on their own. Sorry to hear this. My 6 yr old granddaughter makes this by herself xcept for putting into & out of oven. We don’t melt the butter we slice a stick of parkay marg.in small slices with it still wrapped & with a butter knife. We space it where they are 5 in a row across & then length divide & place. This melts & covers most of the cake top.The cherries & pineapple are moist enough it covers most of the cake. You are going to have a few dry crumbs of cake mix but not much and the rest so moist you can mix it on the plate if necc. even though we don’t have to do that either. Kind of thing you can modify to suit yourself. It’s worth another try. You can mix all kinds of fruits but I love cherry/pineapple. We do find spreading the cherry filling evenly makes a bit of a even taste. Don’t give up try again and good luck.

I have made variations of this for many years. I am making one tomorrow for a ladies brunch. I call it Tropical Sunrise Dump.
I use the 2 cans of crushed pineapple, with the juice, an Orange cake mix, a can of either the sweetened condensed or coconut milk, melted butter and coconut on top. I sift my cake mix before putting it on top of the pineapple. I think that aerates the mix a bit and allows the Liquids to mix and not so many dry spots. Alwaysgets rave reviews. I serve it in steamed martini glasses with a doll up of fresh made whipped cream and toasted coconut sprinkled on top.
