You don’t need measuring tools for this recipe, and it doesn’t require you to stand at the stove which I love!

Just a few simple ingredients make these baked eggs a delicious addition to my morning. I love that it is not only full of flavor, but protein, to keep me feeling full and give me energy to start my day.

- Half and half
- fresh chives and basil
- arugula
- seasoned salt
The half-and-half makes the eggs super creamy and yummy. But if you don’t have it on hand, you can also use plain milk or even heavy cream. I haven’t tried these with a dairy-free alternative so I’m not sure if that would be a good substitution.
Chopped herbs add a lot of flavor without a lot of calories. I try to incorporate fresh herbs wherever I can in my recipes! I used chives and basil but you can use any herbs you like.
How to Make Baked Eggs with Herbs
To make these eggs, you need an oven-proof ramekin or mug. A quick spray with oil will keep the eggs from sticking to the inside and make clean up a breeze.
Step 1
Add a splash of Half and Half to your oven-proof mug, no need to measure.
Step 2
Add the chopped herbs to the half and half in the mug.
TIP: I use my kitchen shears to cut them up, but you can easily just tear them, or get all fancy and use a knife to chop them.
Step 3
Add the eggs to the mug and give them a quick whip with a fork to add some air and make them fluffy.
Step 4
I add a little bit of seasoned salt to give them flavor but that part is totally up to you! They are also tasty with celery salt and sometimes I like to add a little red pepper flake for an extra kick. You can also use just plain salt and pepper.
This is the part of the recipe that you can totally make your own.
Step 5
Put the mug in the oven. Bake for about 20 minutes, until just set.
The eggs will pull away from the sides of the mug a bit, and you shouldn’t see any loose liquid anywhere.
Once they are done, I let the herb baked eggs cool for a minute, then top them with arugula. The arugula adds a tasty peppery flavor, a nice crunchy texture and another layer of freshness.

- Preheat the oven to 350 degrees.
- Spray an oven-proof ramekin or mug with cooking oil.
- Add Horizon Organic Half and Half, chopped herbs, two eggs and seasoning to the mug.
- Use a fork and mix well.
- Bake in oven for approximately 20 minutes or until the eggs are just set.
- Let cool for a few minutes, then top with arugula.
