Easy Baked Bruschetta Chicken Recipe

My goal each week is to feed my family well and get dinner on the table as quickly as possible. I look for or create recipes that have lots of flavors but don’t take a lot of hands-on time.
As a busy mom who works from home trying to keep my kids on track during virtual school, I need dinner ideas that aren’t fussy.
This baked chicken recipe is one of my favorites. It’s versatile, meaning it’s easy to modify how you prepare it and also how you serve it. Changing one or two things won’t ruin the dish.
And the flavor is out of this world!

How to make Baked Bruschetta Chicken
Garlicky tomatoes, balsamic vinegar, and fresh basil give this dish so much flavor.
It’s a recipe that takes just a few minutes to put together and then it’s totally hands-off so you can get back to your other life duties.
This is a tasty way to serve chicken breasts which are a staple in our meals but can get a little boring.
Sometimes I make this meal ahead of time, including baking it! Because of all the juices from the tomatoes, it reheats really well without drying out. And the leftovers are also delish.

Ingredients

- Chicken breasts
- garlic salt
- Italian seasoning
- mozzarella cheese, shredded
- grape tomatoes
- cherry tomatoes
- garlic
- sun-dried tomatoes
- balsamic vinegar
- olive oil
- salt and pepper

Open Nature chicken breasts create the perfect base for this recipe. Quickly seasoned and topped with mozzarella, these baked chicken breasts are moist and tender.
A quick bruschetta with O Organics grape and cherry tomatoes, fresh basil, Signature SELECT Sun-Dried Tomatoes, olive oil, garlic, salt, and pepper make a delicious topping that is crazy flavorful.
A final drizzle of O Organics balsamic vinegar gives it another layer of flavor before going into the oven.
O Organics Arugula, with its peppery flavor, make this a great compliment to this zingy dish.
And the Signature SELECT baguette is a MUST for serving! Lightly warmed, the crust is crunchy and flaky while the middle is tender and light. YUM!
Instructions
Preheat the oven to 350 degrees.
Place the chicken breasts into a 9 x 13 baking dish and evenly top with garlic salt and Italian seasoning.
If you like pepper, you can also add some here.
Top with the O Organics shredded Mozzarella cheese. I used a little more than a cup.
Use your best cheese judgment. (In my opinion, more is always better).
While bruschetta can often take a lot of prep time, this easy version gives you all the flavor, faster. If you have a favorite bruschetta recipe you could absolutely use that instead.
I took a second to cut the larger cherry tomatoes but left the grape tomatoes alone.
If you love tomatoes, you need to make my Roasted Tomato Appetizer with Garlic and Burrata. SO GOOD!
Add torn fresh basil, sun-dried tomatoes (you can also add a little of the oil in the jar if you want to), sea salt, and crushed garlic.
A quick mix and it’s ready to go. So simple.
Spoon it over the chicken breasts and give it a drizzle of balsamic vinegar. It’s not a flavor that my family loves so I went really light. Feel free to add more if you love it.
Bake for about 40 minutes, or until the center of the chicken is not pink and cooked through.
The house smelled amazing while it cooked!
What to serve with Bruschetta Chicken
You can serve this baked chicken with a variety of things. Here, I served it with a simple arugula salad (a drizzle of olive oil and balsamic vinegar with salt and pepper – YUM!) and a toasty baguette.
You can also serve it over a bed of thin spaghetti or another type of pasta. Another drizzle of olive oil on the pasta and a sprinkle of red chili flakes would make it amazing. Keep the arugula for even more flavor!
Creamy polenta would be excellent with this as well.
It could also be served with a side of potatoes. Or pretty much any other type of vegetable.
And you could also turn this into a sandwich! Just grab some hoagie rolls, add a little mayo and arugula and eat up!

Albertsons has so many amazing dinner solutions that make dinner time WAY less stressful.
The last time I was shopping, I noticed an amazing deal in the deli! It was perfect for a family of 4. You could get a whole rotisserie chicken or a fried chicken pack with one deli side and 4 Hawaiian rolls for a really great price. Check your local store to see if they offer this.
Also, I always keep a few frozen options on hand as a backup. It’s easy to round out things like lasagne or chicken pot pie with a few sides to quickly make a meal.

Baked Bruschetta Chicken
Ingredients
For the Chicken
- 4 boneless skinless chicken breasts
- 1/2 tsp garlic salt
- 1 tsp Italian seasoning
- 1 cup mozzarella cheese shredded
For the bruschetta
- 1 pint Cherry Tomato Medley cut larger tomatoes in half or quarters
- 1 pint Grape Tomatoes
- 4 garlic cloves crushed
- 1/4 cup sun-dried tomatoes
- 12 fresh basil leaves torn (reserve some for garnishing)
- 1 TBSP olive oil
- 1 tsp sea salt
Additional Toppings
- 2 TBSP balsamic vinegar
Instructions
- Preheat the oven to 350 degrees.
- To a 9 x 13 baking dish, add the chicken breasts.
- Evenly sprinkle on garlic salt and Italian seasoning.
- Top with mozzarella cheese then set aside.
- In a medium bowl, add all the tomatoes, including sun-dried tomatoes. Add the torn basil, crushed garlic and sea salt. Mix together.
- Pour the tomato mixture on top of the chicken breasts.
- Drizzle with balsamic vinegar.
- Bake for about 40 minutes or until the chicken is cooked through.
- Top with more fresh torn basil when serving.
