Ingredients
Cherry cake mix is ideal for this recipe but it is increasingly hard to find.
I opted to use strawberry cake mix instead which still gives it yummy fruity flavor and when paired with the maraschino cherries, your brain thinks “cherry” instead of strawberry.
You can also use vanilla or yellow cake mix. They’ll still be pretty speckled with maraschino cherries.
The maraschino cherries make these cookies tender and delicate. If you like, you can substitute them for candied cherries which will hold up a little better.
You can use regular sized or mini chocolate chips. I always grab semi-sweet but it’s really up to you.

Instructions
Preheat the oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
Step 1
Give the cherries a rough chop.
Step 2
Add the strawberry cake mix, eggs, and vegetable oil to a large bowl, and stir with a wooden spoon until a dough forms.
Step 3
Fold in the chocolate chips and chopped cherries.
Step 4
Use a cookie scoop to drop dough onto a baking sheet, spacing them 3 inches apart.
Step 5
Bake for 8-10 minutes.
Step 6
Allow cookies to cool on the baking sheet. Then serve and enjoy!

There are no special tools needed to make this recipe at home. However, I do recommend using a cookie scoop or ice cream scoop to portion the cookie dough. This ensures that they’re all pretty much at the same size, would finish baking at the same time, and would look uniform and pretty on your serving platter.

- Always preheat the oven. If you don’t, they will not cook properly. They will probably come out flat.
- Do not overmix the dough. Otherwise, your cherry chip cookies will turn tough.
- Don’t have a cookie scoop? You can also use measuring spoons or a 1/8 cup measure.
