Generally, you want to use the best quality ingredients you will find. I personally like to use baking chunks if I can find them since they are usually a little bit larger than a standard chocolate chip.

Caramels from Kraft are a classic and always give you the right texture. But feel free to use any that you already like.

You really want to use a combination of white and brown sugars to achieve the perfect fudgy brownie cookies.

For the salt, I like to use coarse or flaky sea salt for the aesthetics and flavor. You can use table salt just note it tastes saltier, so go easy on it.

How to Make Brownie Cookies with Caramel

Preheat the oven to 350 degrees Fahrenheit.

Step 1

In a small saucepan, add the butter. Once melted, add the chocolate chips. Stir continuously until the chocolate is completely melted and smooth. Then take it off the heat and set aside.

Step 2

In a separate bowl, add the flour, cocoa powder, baking powder and salt. Whisk together until the flour mixture is combined.

Step 3

To the pan of melted chocolate, add the eggs, brown sugar, white sugar, milk, and vanilla extract. Whisk the egg mixture together until thoroughly combined.

Step 4

Pour the wet ingredients into the dry ingredients. Use a spoon or rubber spatula to fold everything together until a brownie cookie batter is formed. Don’t forget to scrape to the bottom of the bowl.

Use a 1-inch scooper to scoop a ball of the brownie cookie batter and place it on a baking sheet topped with parchment.

Press a caramel into the center of the cookie dough.

Take another half a teaspoon of the cookie dough to cover and seal the caramel inside the cookie.

Step 6

Repeat this with the rest of the cookie dough and caramels.

Sprinkle the top of the cookies with a generous amount of coarse sea salt.

Bake

Bake in the oven for 15 minutes or until a crinkly like brownie crust has formed on the cookies.

Let them cool on a wire rack for 5 minutes then they are ready to stuff in your face. And trust me, you’ll want to!

Variations

  • Chocolate chips – Use different flavored chips like dark chocolate, milk chocolate, peppermint, toffee, peanut butter, or a combination.
  • Stuff with something else – Don’t love caramels? Use a peanut butter cup, Hersheys Kiss or some other delicious treat that will melt and make a tasty center to these brownie cookies.
  • Brownie mix – Cut the number of ingredients down by using box brownie mix. Just add about 1/2 cup of flour to the ingredients called for on the back of the box to give them a more cookie like texture. Then just stuff the cookies as above.
  • Nuts – In addition, you can incorporate some added crunch by tossing in walnuts or sliced almonds with the brownie batter.
  • Ala mode – These caramel brownie cookies are best served warm, and are delicious when paired with vanilla ice cream!

  • Boost the flavor by adding a teaspoon of espresso powder. It’ll have an even richer chocolate flavor.
  • You can melt the butter and chocolate in the microwave. Take a microwave-safe bowl, add chocolate and butter, and set the microwave on High for 30 seconds. Give it a mix. Then, set it in 10-second intervals, giving it a stir each time, until completely melted. Be sure to do this a little at a time so you don’t burn the chocolate.
  • Make a batch of this cookie recipe for later. Place the shaped cookie dough balls on a cookie sheet, cover them with plastic wrap, and freeze them. Just thaw them for at least an hour before baking. You’ll have freshly baked chewy brownie cookies any time you want!
