Ingredients
- all-purpose flour
- crescent rolls
- brie cheese
- whole berry cranberry sauce
- fresh rosemary sprigs
You can use any flour. It’ll be used for dusting, so even cake flour or bread flour will do.
I like to use crescent rolls because I find them easy to work with. However, you can actually use puff pastry sheets to make pastry cups. Just cut a sheet of puff pastry into 2-inch squares. You can easily find them in the freezer section of your local grocery store.
I recommend using whole cranberry sauce and not jellied. This is because the jelly can be too solid. The texture of the whole berry sauce looks even more beautiful, too! You can even make your very own homemade cranberry sauce if you’re feeling adventurous.
And you’ll notice store-bought cranberry sauces popping up as we get closer to the holiday. Trader Joe’s has an amazing option with bright citrus flavor that I would absolutely use.

How to make Cranberry Brie Bites
Preheat oven to 375°F degrees. Use cooking spray to line the mini muffin tins before cooking and set aside.
Step 1
Spread a little flour out onto your counter or cutting board to lay the dough on.
Roll out the crescent dough sheet on your lightly floured surface and pinch the seams together to make one long sheet.
Step 2
Cut the crescent roll dough sheet into 24 equal-sized squares. Then place the pastry squares into each muffin tin slot.
Step 3
Using a sharp knife, cut the brie into small pieces. Place one cube of brie inside each crescent dough square.
Step 4
Top the dough brie with a generous spoonful of cranberry sauce.
Step 5
Top the cranberry sauce with a little sprig of rosemary.
Step 6
Place them in the oven and bake until the crescent dough is a light golden brown (about 12-15 minutes).
Serve
They are best served warm.

Variations
- Flavors – Try swapping the cranberry sauce with pepper jelly, orange marmalade, raspberry jam, or apricot preserves.
- Texture – Top the little bites with chopped walnuts, pistachios, cashews, or toasted almonds for added crunch.
- Spicy – Drizzle hot honey or serve it on the side for an interesting sweet-spicy flavor. You can also set out chili flakes and sea salt in shakers on the side so guests can add their own heat.

Top tips
- Freeze the brie wheel for at least 20 minutes before slicing. This makes it easier to cut rather than when its at room temperature.
- You can also use a pizza cutter to slice the rolled-out crescent dough.

Yes! You can pre-asseble the brie bites. Refrigerate while still in the mini muffin pan and bake them the next day.
You can also freeze them. Once they’re frozen, lay them on a freezer-safe container or cooking spray-coated baking sheet and cover them with plastic wrap. Store in the freezer for up to two weeks. You have frozen bites ready to be baked anytime!
For most brie appetizer recipes, you don’t have to because the rind is completely edible. It even helps keep the shape when making melted brie fondue or any other recipe that doesn’t require cutting the wheel of brie cheese. So it’s totally up to preference.
Store your leftover little brie bites in an airtight container. They will stay good in the fridge for up to 4 days. Alternatively, you can freeze them and reheat them in the air fryer or oven later.
