Butterscotch Walnut Cookies

Easy desserts are my favorite, and this delicious cookie recipe is one that people always ask me to make for them. You can have a fresh-baked batch of cookies in around 30 minutes which makes my boys super happy.

These cookies are totally packed with flavor and while they look like those fancy cookies you would get from an upscale bakery, the truth is they aren’t complicated to make!
Butterscotch is mainly brown sugar and butter and it’s one of my favorite flavors in life. It’s like caramel but next level.
I loved using butterscotch chips in my Apple Butterscotch Cookies, so I knew that I wanted to make even more cookies with it.
These cookies are chewy and delicious. Best of all? They are an incredibly easy dessert to make at home!
Whip up a large batch because everyone will want to grab one (or two).
Ingredients
I love making desserts from cake mix, but I like cookies that are made from scratch. While it can seem daunting, it’s just a little bit of extra measuring.
All you need is some butter, sugar, brown sugar, vanilla extract, eggs, flour, walnuts, butterscotch chips, and if you want to take these cookies to the next level, some butterscotch sauce!
If you do want to add the extra butterscotch sauce like I do in this post, just grab a jar of store-bought ice cream topping. This butterscotch sauce in a squeeze bottle keeps things super simple.
You could make your own butterscotch, but I like to use store-bought to get myself out of the kitchen quicker.
How to Make Butterscotch Cookies
- Preheat the oven to 350 degrees.
- Line a baking sheet with parchment paper and set aside.
- In a large pan brown the butter: Cook over medium heat until golden, you’ll feel a toasted nut aroma. Remove from heat and let cool for about 5 minutes.
- Beat browned butter with sugar, brown sugar and vanilla extract with a hand mixer.
- Add egg and beat until fluffy.
- Incorporate the flour by adding a little bit at a time and mixing.
- Fold in the butterscotch chips and walnuts.
- Scoop out a ball of dough, with a cookie scoop, and place on a cookie sheet.
- Swirl some butterscotch sauce on top (optional, but worth it!) and put in the oven.
- Bake for 12 minutes or until golden brown and cooked through.
- Remove from the oven and let cool on the pan for around 10 minutes before removing them.
A few tips for making perfect cookies
The perfect finishing touch
I also like to add a swirl of butterscotch sauce to the top of the cookies because for me butterscotch sauce is life.
However, you can skip that last step or even swirl some melted chocolate or jam.
Brown your butter
Browning butter is a super easy trick that infuses a lot of flavor to your baked goods.
Just melt butter in a pan and cook for around 20 seconds or until it becomes slightly golden and smells like baked nuts.
Browned butter has some delicious caramel undertones that make the whole cookie taste more like butterscotch.
Chop the walnuts
I highly advise you to chop your walnuts to tiny pieces that way you get a couple of walnut pieces in every bite resulting is a super crunchy cookie.
