To ensure that you have the right amount of ingredients you first need to have an idea of how many finished steak bites you want to make overall.
The 2-pound flank steak will give you way more than enough meat for a bunch of steak appetizers. I had a lot left over. With one red onion, I could make about 24 appetizers.
You can also use skirt steak but sometimes that can be harder to find. It has a little more fat and flavor but is maybe a little bit tougher.
I love the tang of blue cheese crumbles but you can use something else you may like better, like goat cheese, feta or gorgonzola.
Fresh thyme is the perfect finishing touch. So is the balsamic vinegar. But you could use a balsamic glaze (reduced down, a little thicker and a little sweeter) if you prefer.
How to make this blue cheese steak appetizer
Grill the steak
- Use garlic salt and pepper to season the flank steak.
- Grill or cook the steak to your desired doneness.
- While the meat is cooking, grill or saute onions until they are soft (about 10 minutes).
- Let the steak rest until it is cool enough to handle.
- Thinly slice it across the grain.
- Chop the grilled onion.
Assemble
To assemble the appetizers with steak, layer a piece of steak, some grilled onion and blue cheese crumbles on top of a TRISCUIT.
Drizzle with a little bit of balsamic vinegar.
Add a few leaves of fresh thyme.
If you don’t want to make them ahead, you can set out the ingredients for the steak bites and have your friends build their own.
All it takes is a little layering, and you’ve got a super simple, totally delicious Triscuit Appetizer idea.

Triscuit Appetizer with Blue Cheese and Flank Steak
Ingredients
- 2 pound flank steak
- 2 tsp garlic salt
- 1/2 tsp black pepper
- 24 TRISCUIT Crackers
- 1 ci[ Blue Cheese Crumbles
- 1-2 Red Onion sliced
- 4 sprigs Fresh Thyme
- 1 TBSP Balsamic Vinegar
Instructions
- Use garlic salt and pepper to season the flank steak.
- Or use your favorite flank steak seasoning.
- Grill flank steak to your desired doneness.
- At the same time, grill your sliced red onions until they are charred and soft, about 10 minutes.
- Let steak rest and when it is cool enough to handle, slice thinly, across the grain.
- Chop grilled onions.
- For each steak bite, layer a piece of steak, grilled onion, and blue cheese on top of a TRISCUIT.
