You may not think about whiskey when putting together your summer cocktail recipes. But you need to!
This strawberry whiskey cocktail is so easy and delicious. It’s a nice, fruity twist on a classic cocktail recipe.
As I’ve mentioned before, whiskey is something that is included in holiday celebrations with my husband’s family. And we’ve started to make more whiskey sours at home.

This summer whiskey sour is one I’ll be making until the weather cools down (which, here in California, is pretty much into January!)
But I should note: this isn’t your day drinking, sipping around the pool, type of cocktail. This is a warm summer night on the patio cocktail.
The lemon and strawberry keep it bright. But the Magnus is a Scotch, and its smoky flavor keeps it complex. Refreshing, yes. But best when sipped and enjoyed slowly.
Ingredients
- fresh strawberries
- fresh thyme
- Scotch (or bourbon or whiskey)
- fresh lemon juice
- simple syrup
- soda water, chilled
- extra strawberries and lemon wheels, to garnish
Fresh strawberries and fresh thyme add a real freshness that is key to this summer whiskey cocktail.
You can also use marjoram, oregano, and just about any other kind of fresh herb if you don’t have the thyme. Rosemary would be rather good here too.
Scotch is a perfect pairing for this drink but it is quite smoky, so if that is not your thing go for something more subtle, or even your favorite Bourbon.
Fresh lemon juice and simple syrup (make your own, use store-bought or use this cheater simple syrup in a pinch) help to balance the flavors and make this super sippable.
The little bit of club soda makes this super refreshing with just a touch of fizz. Sparkling water or water from a SodaStream would also work here.
Directions
Step 1
Add strawberries and lemon juice to a cocktail shaker.
I added the strawberries whole but you could give them a rough chop if you prefer – it really depends on how big they are!
Step 2
Strip the thyme leaves from on sprig into the cocktail shaker.
Fresh herbs can add so much flavor to a drink. I love that they tend to hit your nose first and get you excited for the sip!
Step 3
Muddle the strawberries, lemon juice and fresh thyme.
Aside from the Magnus, this recipe doesn’t require anything fancy. I even used the back of a wooden spoon to muddle. It’s all about improvising.

Step 4
Add the scotch and simple syrup.
Step 5
Add ice to the shaker and shake well.
Step 6
Strain the whiskey sour with strawberries into a wine glass. I think it looks cute, but you can use any glassware you prefer.
Top with club soda.
I don’t typically go crazy with garnish. A simple strawberry does the trick for this drink!
Why Scotch
The Magnus scotch (no longer available but Highland Park has other delicious varieties) has a really smokey flavor. I love how it pairs with the strawberries but if you find it too bold, just swap it out for your favorite whisky or bourbon.
Scotch would also be delicious on the rocks when the weather starts to cool down. I think the smoky notes would also go really well with BBQ also (but what doesn’t, amIright?!)
Variations
Like with my other recipes, I like to give you a base and then tell you to make it your own!
- Adjust the simple syrup: At first, I used less simple syrup because I don’t love things too sweet, but in this case, because of the fresh lemon juice, you need the simple syrup.
- Adjust the amount of herbs: I LOVE fresh herbs so I added more. If you like a more subtle flavor, use less.
- Use a flavored simple syrup: If you want even more herb flavor, consider using a flavored simple syrup like my basil simple syrup! Or, to amp up the amount of strawberry, I’ve also got a recipe for strawberry simple syrup.
- Use different fruit: Any berry that muddles well would be delicious here.
Frequently Asked Questions
The difference between whiskey vs. whisky? I had to look it up. The Irish spell it with the “e” and the Scots spell it without. But either would be delicious in this cocktail!
The ingredients whiskey and scotch are a little different. You can read all about it in this Eater article. But in general, scotch is very smoky in flavor compared to most whiskey. It adds a whole other flavor element to cocktails in the same way that mezcal does.

Whiskey Sour Recipe with Strawberry
Ingredients
- 2 strawberries muddled
- 2 sprigs of fresh thyme
- 2 oz. Scotch
- 1 oz. fresh lemon juice squeezed
- .75 oz simple syrup
- 2 oz. soda water
- extra strawberry and lemon to garnish with
Instructions
- Muddle strawberry, thyme and lemon juice in a cocktail shaker.
- Add the scotch and simple syrup.
- Add ice and shake well.
- Strain into wine glass or Collins glass.
- Top with soda water.
- Garnish with strawberry and lemon (optional).
