This easy Oatmeal Brûlée recipe is a delicious way to jazz up your everyday oatmeal. A burnt, crusty sugar top layered on your daily oatmeal is delicious and feels a little extra. It’s a super simple way to make breakfast even more delicious!

Why You Need to Add Burnt Sugar to Your Oatmeal

A bowl of oatmeal with a bruleed sugar crust is decadent but SO simple.

With just a little extra sugar and some fresh berries, you can elevate your run of the mill breakfast. This Oatmeal Brûlée recipe is a great idea for kid’s birthdays, brunch or regular old breakfast on a Monday.

I love a good creme brûlée. And while those words technically mean burnt creme, it’s best known for the hard crust of sugar on top.

When sugar starts to melt it gets all sweet and liquidy and as it cooks a little more, it starts to crisp up and as it burns the flavor turns caramel-y and amazing.

Which makes it perfect for topping your oatmeal. This Brûlée Topped Oatmeal recipe couldn’t get any easier. You can do this with a packet of instant oatmeal and add-on just a minute to your normal school-day breakfast routine.

You kids will love this nice sweet surprise on their breakfast. I think, unfortunately, that if I ate this every morning, I might need to buy new pants…

Ingredients

You only need to add sugar to your favorite oatmeal recipe to make Oatmeal Brûlée!

Here’s what you need to make this Broiled Oatmeal recipe:

  • a packet of oatmeal (or homemade)
  • sugar

You will need a few supplies to make the sugar crust. You can either use the broiler setting on the oven or a creme brulee torch.

Turbinado (raw) sugar or brown sugar is best for a nice caramalized, burnt sugar topping, but any sugar should produce a delicious crust. My favorite way to do it is mix brown sugar with a little white sugar (white sugar melts a little better but brown sugar HAS THE BEST FLAVOR EVER!).

Step 1

Prepare your oatmeal per the package directions and make sure it is in an oven-proof ramekin.

Top it with sugar.

Oatmeal Brûlée topped with fresh berries and yogurt with a spoonful taken out of it.

Step 2

Pop the dishes under your broiler and watch closely to make sure you aren’t over cooking the sugar (it just takes about 20 seconds or so). Alternatively, brûlée the top with a kitchen blowtorch.

Top with your favorite berries and serve.

Variations

  • Add vanilla – lean into the classic Creme Brûlée vibe a bit more by adding a splash of vanilla extract to the oatmeal when you’re making it ready to top with the brûlée topping.
  • Add a fruit layer – add a layer of frozen, thawed berries, fruit compote, or even unsweetened apple sauce to the bottom of the ramekin before adding the oatmeal for a fruity surprise at the bottom!
  • Add dried fruit – Or, you can add dried fruit to the oatmeal mixture.

Frequently Asked Questions

Can I reduce the sugar in this oatmeal recipe while still keeping the brûlée top?

Yes! Just don’t add any sugar to the oatmeal itself, as the topping will provide plenty of sugar. This is easier to control with homemade rather than packet oatmeal.

Is this Brûlée Topped Oatmeal recipe vegan friendly?

If you use plant-based milk, yes! Just remember to make sure your oatmeal is vegan friendly (or dairy free if you’re just looking to cut out the milk) if you’re using a packet.
